Dry white wine, 100% chenin
Harvesting (by hand) takes place over several weeks at the end of October. The aim is to harvest a maximum of ripe grapes. Fermentation takes place slowly in oak barrels, 20% new. Bottling takes place in the spring.
Eye : Straw yellow with hints of gold.
Nose : A beautiful freshness is revealed with notes of dried fruits, ripe white fruits and a fresh citrus finish.
Palate : Round and buttery, well structured. A rich and harmonious wine, balanced by a pleasant freshness.
Serve chilled, at 8-10°C. A wine to be served with dishes of character, fish with white sauce or pan-fried scallops.
